Di’s Mac & Cheese

- Ingredients:
- 1 lb. Macarini
- ½ Block Velveeta Cheese Loaf (Cubed)
- 1 Stick Butter
- 1 Can Evaporated Milk
- Salt & Pepper
- Instructions:
- Boil Macaroni in salted water.
- While macaroni is cooking, cube Velveeta and Butter.
- Drain Macaroni, and add butter, stir until melted.
- Add Velveeta and stir until melted.
- Place on low heat and blend in evaporated milk, a little at a time. (usualle 2/3 to ¾ of the can)
- Add Salt & Pepper to taste.
Mike’s Easy Iced Coffee

- Ingredients:
- ¼ c. water (does not need to be hot)
- 2 tsp. instant coffee
- 2 tsp. raw cane sugar
- ½ c. milk
- Ice cubes
Instructions: - Mix 2 tsp. instant coffee and 2 tsp. raw cane sugar in ¼ c. water – whisk until frothy.
- Pour coffee mix over ice cubes and top with ½ c. milk.
- Stir lightly, sip and enjoy.
Duane’s Homemade Rice-A-Roni (Beef)

- Ingredients:
- 1 Lb. Ground Beef
- 2 Cups Rice
- 2 Cups Vermicelli or Spaghetti noodles (broken into 1” pcs.)
- 1 Stick Butter
- 6 Cups Water
- 2 Tbsp Bullion, Beef
- Instructions:
- In a small skillet, cook ground beef until no longer red, set aside.
- In a large skillet, add butter, rice, pasta noodles. Saute until tan or brown, however you like it.
- Add Beef, water and Bullion. (I use Better Than Bullion, it does not have all the salt.)
- Simmer 8 to 10 minutes, until rice and pasta are al dente. Salt and Pepper to taste.
Duane’s Spicy Chili Peanuts

- Ingredients:
- 8 cups roasted salted peanuts (2.5 lbs)
- 2-1/2 Tbsp chili powder
- 1-1/2 tsp garlic powder
- 1-1/2 tsp onion powder
- 1-1/2 tsp cayenne pepper
- 2 Tbsp vegetable oil
- Instructions:
- Preheat oven to 3500 F.
- Line a baking sheet with parchment paper.
- In a small bowl, mix the dry ingredients.
- In a medium bowl, place the peanuts, with the oil and 2 Tbsp of the seasoning mix.
- Stir well until evenly coated.
- Spread the coated peanuts on the prepared pan.
- Bake for 5 minutes.
- Remove from the oven and toss the peanuts in the remaining seasoning mix.
- Ready to enjoy warm, or when cooled, store in airtight container
Duane’s Boiled, Unbaked Fudge Cookies

- Ingredients:
- 1 stick butter (1/2 Cup)
- 2 cups white sugar
- 1/2 cup milk
- 4 Tbsp cocoa powder (unsweetened)
- ½ cup peanut butter
- 1 tsp vanilla extract
- 3 cups quick oats
- Instructions:
- Melt butter in a large saucepan over medium heat.
- Add sugar, milk, and cocoa powder. Stir constantly over medium-high heat until it reaches a rolling boil.
- Once boiling, stop stirring and boil for 60 seconds.
- Remove from heat and add peanut butter and vanilla extract.
- Stir in oats until fully combined.
- Drop by spoonfuls onto parchment or wax paper.
- Let cool completely to set.

Don’s London Broil

London broil, is a beef dish made by broiling marinated beef, then cutting it across the grain into thin strips. Despite its name, the dish and the terminology are American, not British.[
- London Broil from Staters
- WRIGHT’S Hickory Liquid Smoke – 3.5 Oz
- KC Masterpiece Original Barbecue Sauce, 40 oz
Marinade 2 hours in refrigerator then grill to Medium Rare
